- 4 large cans sweet potatos - heated and drained
- 1/2 c. milk
- 2 eggs
- 1 c. sugar
- 1/2 c. margarine
- 1 tsp. vanilla

- Mix the above ingredients together and put in a baking dish. Next, combine the
- following in a saucepan:

- 1 c. brown sugar
- 1/2 c. milk
- 1 c. chopped pecans
- 1/3 c. flour
- 1/2 c. margarine

- Bring to a boil. Pour over sweet potato mixture. Bake @ 350 degrees for
- approximately 40 minutes.

- Sweet Potato Casserole Byrum (from Gourmet Magazine):

- 3 cups mashed cooked sweet potatoes
- 1/2 cup granulated sugar
- 1 1/2 sticks (3/4 cups) plus 1 tbs unsalted butter melted and
- cooled
- 2 large eggs
- 1 tsp vanilla
- 1/3 cup evaporated milk
- pinch nutmeg
- 1 cup firmly packed light brown sugar
- 1/2 cup all purpose flour
- 1 cup chopped pecans

- Preheat oven to 325 degrees

- In a large bowl mix potatoes, granulated sugar, 1/2 cup of the
- butter, eggs, vanilla, milk and nutmeg to a smooth mixture. Put
- in 8" square baking dish. In bowl use a fork to stir together
- brown sugar, flour, remaining butter and pecans. Sprinkle
- mixture over top of casserole. Bake 30 minutes. Serves 6-8.

- Here it my recipe (borrowed from the Hoosier Cookbook)

- 3 C. sweet potatoes, mashed
- 1/2 C. butter, melted
- i teas. vanilla
- 1 C. sugar
- 2 eggs

- Topping:
- 1/3 C. butter
- 1 C. brown sugar
- 1/3 cup flour
- 1 C. pecans, chopped

- Mix the first 6 ingredients together and put in a buttered baking
- dish. Mix topping ingredients until coarse like pie dough and
- sprinkle over the sweet potato mixture. Bake @ 350 for 30-40
- minutes. Serves 6.
